What are fresh-cut vegetables?

Fresh-cut refers to fruit, vegetables and salad prepared before delivery so that a kitchen can use them straight away. Typical steps are washing, trimming, peeling, cutting and – for mixed products – blending to a recipe. Unlike frozen goods, tinned produce or pre-cooked components, fresh-cut vegetables remain a raw fresh product. They keep the bite, colour and taste of fresh vegetables, but must be kept chilled at all times and used promptly.

The industry uses several terms for this: pre-cut vegetables, prepared vegetables, kitchen-ready vegetables or convenience vegetables. They all mean the same thing: time-consuming preparation moves from your kitchen to the supplier, and your team starts straight away with cooking, plating or portioning.

Cuts and specifications

With fresh-cut vegetables, the specification determines the result in the kitchen. That is why we define the cut, cut size and pack size together with you – to match your recipes, cooking times and workflows. You can choose these parameters freely:

For example, we supply tricolour pepper strips in a width of your choice, and red cabbage and onion rings in a thickness of your choice. For wok or soup vegetables, you decide the ingredients, cut size and ratio yourself. Every specification is recorded in writing with the quote, so that every delivery is identical – at one site just as at a hundred.

Quality and food safety

Fresh-cut vegetables are an ultra-fresh product. Quality depends on three factors: clean processing, an unbroken cold chain and short routes. Convenience GmbH is certified to IFS Broker version 3.2 – with 97.4 % at higher level. The scope of certification explicitly covers trading in fresh and ultra-fresh convenience products as well as fresh fruit and vegetables.

Processing – washing, cutting and mixing – is carried out by our network of specialised partner companies to the specification agreed with you. Convenience GmbH manages sourcing, specification, quality assurance and logistics and remains your single point of contact. We supply central warehouses as well as individual sites. How long do fresh-cut vegetables keep?

Fresh-cut vegetables are an ultra-fresh product and only keep when chilled continuously. The exact shelf life depends on the variety, cut and packaging and is stated for every product in the product specification you receive with our quote. As a rule, fresh-cut vegetables keep for around 5 days at a storage temperature of 2 to 7 °C. Because we deliver next-day and up to five times a week, you can order smaller quantities more often – and therefore fresher.

Which cut sizes and pack sizes are available?

The cut, cut size and thickness follow your specification – for example dice, strips, julienne, slices, rings or chopped, with white cabbage cut to a width of 2 mm, for instance. The standard pack size is 0.5 to 3 kg, 0.5 to 1 kg for herbs such as chopped parsley and 100 to 500 g for sprouts. Other pack sizes are available on request.
